This meal is seriosuly easy and seriously delicious. It’s my go-to choice for a fast meal that won’t leave me feeling guilty. Unlike my other go-to favourites like mac-n-cheese, Mr Noodle, and pizza. I never said I was perfect.
Anyways, this is a winner combination of flavours requiring just one pot and one pan. It doesn’t really get faster than this either. I can whip this up in 10 minutes- and I often do!
Let’s dive in, shall we?
Set a pot of water on to boil. Add gnocci to boiling water and stir to separate. Let boil until gnocci begins to float. You want to heat them through without losing the texture. If over cooked, your gnocci will be too soft and gummy- nobody wants that.
Combine in a pan on med heat:
- 2 cloves of garlic, diced
- half a red onion, chopped
- 1 tbsp capers
- sundried tomatoes, as many as you like
When onions are nearly soft, add:
- 1/2 pint cherry tomatoes, halved
- 2 good handfuls fresh baby spinach
Stir and cover until spinach is wilted and cherry tomatoes are soft but not mushy
Season to taste with:
- Olive oil
- Balsamic vinegar
Strain the gnocci and transfer it to a serving bowl. Spoon your toppings over the gnocci and give it a gentle stir. Serve it as is or with a sprinkle of Parmesan. Enjoy!
